My eggplant in oil Mia madre ogni anno aveva l'abitudine di preparare le melanzane sott'olio per tutta la famiglia e io adoravo quelle melanzane, mmmmmmm ottime!!!
Non mi sono mai interessata veramente a vedere il procedimento per prepararle, tanto c'era lei che le faceva
e..... io non mi sono mai presa la briga di imparare....
Dall'ultima volta sono passati un po' di anni, 11 e mezzo per l'esattezza, ma il ricordo di lei è sempre costantemente con me.... a volte mi pare che basti una telefonata per chiederle, come facevo spesso, "Ma' ma com'è che se faceva quel...." Er il mio modo di iniziare le nostre telefonate e.... quanto mi manca....
Vabbè.... per tornare a noi... come dicevo, erano anni che nessuno preparava più queste melanzane, perchè io non avevo la ricetta e quelle fatte da persone vicino a me, non hanno nemmeno la più piccola possibilità di essere altrettanto buone!!!
Poi, per caso, ho trovato chi le prepara nello stesso modo in cui le faceva lei e ho voluto provare.... quattro melanzane, giusto per.....
Il successo è stato strepitoso, in famiglia sono piaciute tantissimo e adesso voglio dividere con voi questo procedimento.
Occorrente:
1 barattolo vuoto, ben pulito e asciutto
4/5 melanzane per barattolo da 400 gr
sale grosso (anche fino va bene) qb
aceto di vino bianco (tranquille, a prodotto finito non si sentirà affatto, ve lo assicuro!) qb
olio evo qb
3 spicchi di aglio
origano
Procedimento:
Prendere le melanzane, privarle della parte superiore e caparle accuratamente.
